Directions
Ingredients
- 5 lamb loin chops
- Salt and black pepper, to taste
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
Instructions
1. Bring to Room Temperature
Remove the lamb loin chops from the refrigerator about 30 minutes before cooking. Place them on a paper towel-lined cutting board, pat dry, and season generously with salt and black pepper.
2. Render the Fat
Heat a large cast iron skillet over medium-high heat. Place the lamb chops in the skillet fat-side down. Use tongs to keep them balanced and gently pressed against the pan so the fat renders and turns crisp and golden, about 5 minutes.
3. Sear the Chops
Once the fat has rendered, lay the chops flat on one side. Cook for about 3 minutes, until nicely browned, then flip and cook the other side.
4. Add the Flavor
Lower the heat to medium-low. Carefully spoon off most of the rendered lamb fat, then add the butter, garlic, and chopped thyme. Stir until the butter is melted and foaming. Spoon the garlic butter over the lamb for about 1 minute, letting the flavors soak in.
5. Serve
Transfer the lamb chops to a serving dish and pour the garlic butter sauce over the top. Serve warm and enjoy.
